Combine your peels and acids
Add your citrus peels to a clean container along with your acid blend (typically citric and malic acid). Massage the peels into the acids to help extract oils and flavor. -
Let it rest
Leave the mixture at room temperature for about 2 hours. This gives the acids time to break down the peels and pull out all the good stuff. -
Blend it all
Dump the acid-peel mixture into a blender. -
Add the rest of your ingredients
Add your sweetener, water, and any other flavoring elements. Blend on high speed until fully combined. -
Strain and bottle
Pass the mixture through a fine mesh strainer to remove solids. Bottle it up — baraboom barabam, you’ve got yourself a cordial.
